Fridays can be busy, that is not news, but the weekend is almost here and that is a great time to sit down to some eggs. Don’t get me wrong, there are not many things quicker to make than eggs, but it can sometimes seem like too much for the busy weekday morning.
Today is “World Egg Day” and if you can’t bring yourself to ‘celebrate’ today, make some time to crack some eggs this weekend.
Biggest question is, how should you prepare those eggs? There are so many options, from raw in a glass (yuck!) to boiled, fried, pickled, hot, cold… there is not much you can’t do with these cackle berries. I really love eggs Bennie, especially with smoked salmon, but if I need a quick grab and go breakfast I go with the egg in hole with some maple syrup on top.

Every day I hear of more and more people raising hens for their own fresh eggs. How hard can it be?
